Tara Hall, 27, from Irvinestown, operates an independent drive-through coffee business called Fort Coffee from a shipping container on Forthill Street in Enniskillen.

The business opens at 8am and closes at 3pm. Hall runs it largely alone, preparing food for subsequent days and baking every other day.

Fort Coffee offers breakfast items such as overnight oats, bowls, granola and bakes. All food is homemade, prepared in her aunt's kitchen in Irvinestown.

Hall uses Colombian beans roasted in Ballybofey, County Donegal. She stocks one syrup and does not serve matcha. Her own drink is a black Americano.

She said she wanted a drive-through rather than a traditional cafe, focusing on convenience and speed. The Forthill Street site was selected for access to commuters travelling between Irvinestown and Enniskillen.

Morning trade is strong, with parents and teachers among regular customers during the school drop-off period. Customer numbers increased steadily through May, June and July.

Hall does not see nearby Costa or McDonald's as direct competitors. She said McDonald's is a fast food chain and she is not a fan of Costa's coffee standard.

Before starting Fort Coffee, Hall studied geology at Aberdeen and later worked in construction and engineering in Australia, where she saved money to fund the business. After returning home, she worked in her aunt's coffee shop.

Her long-term plan includes additional locations and staff. She said if she were opening again, she would add another window to the container.
